It’s better to be safe than sorry: the effects and expenses related to overtime deposits from grease-laden vapor can be extensive, even if the oil buildup is obscured by the filters. The oil vapors are trapped and accumulated in your hood system. Flame and concentrated heat on the cook stove may flare up, if the grease build up is heavy enough to catch fire (Ackland 2012, 6-7).

Following the air ventilation, the fire can potentially reach the roof or spread through the kitchen and to the restaurant (Ackland 2012, 6-8).

Through the scheduled cleaning, maintenance, and fire hazard inspections the owner can protect the facility from fire damage and employees and customers from injuries.

Based on NFPA (National Fire Protection Association) standards established for the safety of restaurants, every public and private industrial kitchen needs scheduled exhaust system cleaning. The frequency of the cleaning is related to the restaurant’s operations volume. Fire Marshals require that restaurants adhere to the fire code - National Fire Protection Code 96 (NFPA 96) - adopted by the state (NFPA 2011).
